Day 6

Breakfast wasn't the usual this morning, sadly. We ran out of goat yogurt, so it was a breakfast smoothie. Same recipe, just more fruit and more almond butter for a little extra protein.

Let's just say our supplies were depleting today. So, lunch was spaghetti squash, and dinner was a salad and a piece of pita bread.

So, with the depleted supplies, I ended up having three smoothies today... Yikes. Well, at least it wasn't chocolate.

I'll do better tomorrow, I promise.(;

Day 5

Today's breakfast was the usual.

Lunch was some leftover spaghetti squash. YUM!

Then my delicious smoothie I posted about earlier.

And for dinner,

we had some very very good chicken fajitas! SO GOOD! Of course, I couldn't have a tortilla, so I had some of my filling in a lettuce wrap, and some by itself.

Here's what they looked like:

Along with the filling (which was found from the recipes in The Maker's Diet book) we had some homemade salsa, goat cheese, and homemade guacamole.

Here's the salsa recipe:

8-10 cherry tomatoes
1/4 of a small onion
1/4 of a jalapeƱo
1 tsp of cilantro
1 clove of garlic

I pulsed all of these in my Magic Bullet with the cross blade until chunky. DELICIOUS!

The goat cheese was found at a local little Amish store called The Cheese Shoppe.

Here's the guacamole recipe:

3 avocados
Juice of a lime
1/2 tsp cumin
1/2 tsp of paprika
1/2 of a medium onion, chopped
2 cloves of garlic, chopped
2 Roma tomatoes, seeded and chopped
1 tbs of chopped cilantro

Coat peeled avocados with lime juice. Add spices and use potato masher to blend and smash avocados. Fold in chopped onion, garlic, cilantro, and tomatoes.

I will definitely be having all of this food today again! It was all so good! I highly recommend it.

YUM!

I'm posting this now, because it was SO good that I feel like it deserves it's own post! I will definitely be making this A LOT more!

What this is, is a berry smoothie. Did I mention that it was SO good?!

Once again, this was made with my Magic Bullet (which I LOVE!).

Strawberry Blueberry Smoothie

1 C of frozen strawberries. (I use Kirkland brand from Costco)
1/4 C of fresh blueberries. (These happened to be from Whole Foods Market)
1 Tbs of pure almond butter. (Martins)
1/4 C of goat yogurt.
1/2 C of water.
Agave to taste.

Blend until smooth! DELICIOUS!
